Italian Style Chicken Broth
I’m always on the hunt for tasty broth recipes and thought I’d try my hand at creating my own.
I heat mine up on the stove then pour it into a mug, add cracked pepper, Himalayan rock salt and drink it down. I know some people like to heat it up and enjoy it as a soup with a spoon but aint nobody got time for dat!
Now I’ve used chicken bones for this recipe but there’s no reason why you can’t use any other animal, I just saved the chicken carcasses from whenever I baked a roast chook so they wouldn’t go to waste. I’m pretty happy with the outcome so thought id share it. For my Italian style chicken broth you will need:
2-3 cooked chicken carcasses
3 garlic cloves
5 Bay leaves
1 tbs black peppercorns
½ tbs Himalayan rock salt
3 tbs tomato paste
1 onion, quartered
1 large sprig of Rosemary
• Add ingredients to slow cooker and top up with water.
• Turn slow cooker onto low setting for 18-24 hours then strain and allow to cool before putting into the fridge.
