I’m always trying to find snacks for my toddler who now refuses to eat anything that could possibly provide him with any sort of health benefit. I’m not exactly sure when this occurred but it’s now a fully-fledged thing.
Luckily he thinks anything that is circular and I call a cookie is a treat from the gods and he 9 out of 10 times gobbles it up. But, because I am legally obliged to feed him regardless of his culinary displeasure, I am forced to continue to try and find healthy albeit sneaky ways to get some kind of micro nutrients into this child. The hit of the week is Banana Cookies.
I’m running these bad boys for myself also. They are pretty plain but go down well with a cup of coffee during your ED shift from hell Ah the simple things in life!
INGREDIENTS: Makes 10-12
1.5 cups almond meal
2 tbs protein powder
1 tsp baking powder
2 tbs peanut butter
1 tbs melted coconut/olive oil
1 tbs honey/rice malt syrup
1 large egg
25-50ml water if it’s too dry to mould into balls
Combine all ingredients well and flatten tablespoon amounts onto your hands then place on a tray lined with baking powder.
Bake at 180 degrees Celsius for 10 minutes. Remove from baking paper while still hot otherwise it will stick – annoying.
